You can define custom fields for both describing the Acceptance Criteria and Definition of Done alongside this you can capture the status of those attributes.

Here are some possible configuration options that could be used to show the flexibility of JIRA Agile

Acceptance Criteria - multiline text field

Acceptance Criteria Status - Single select option

• Not defined
• Under review
• Approved
• Achieved

Definition of Done Status - Single select option

• Incomplete
• Complete 
• Cancelled

Definition of Done Date - Date field

Any information held in a customfield is then available for reporting (and audit) purposes
