How Can we add fields under project details where we have Key , URL , category. Can we add new fields?

Jira only provide possibility of adding fields to Issues and not Project.

But there is this plugin in market place that add some feature you desire - https://marketplace.atlassian.com/apps/1217709/enhanced-project-properties?hosting=server&tab=overview
