I guess the screenshot is from Assets / Services object schema. Services in Assets are read-only. Kindly follow these steps:
1- Open your service desk project page as the project admin.
2- Select the "Services" menu on the left side.
3- Click on the "Service" you would like to remove.
4- Click on the 3 dots. You can find them on the right top.
5- Select "Delete"
I hope that helps. There is no rollback for the deletion. So, please be careful.

We have the same issue, services where Admins have the 'delete' option grayed out for all services.

You will need to delete them via the Service Desk that manages them. Although you can create assets under the Assets menu, you will need to access the Assets list from your SD and delete them from that screen

That worked but the process is crazy anyone who can modify a ticket in SD can delete the service.
