When I look at the application.xml, I'm seeing the following:
Why is this happening? Should be concerned at this point in time? This is a pretty new instance without much activity from users. It's a QA environment. Maybe these metrics aren't available until the instance is being used more?

The first question I have for you is what OS are you Running the checks on? The "UNKNOWN" value for the file descriptors is the expected value for Windows operating systems and the "32768" value only applies to Linux machines.
However, If you are on a Linux box the document "Too many open files error in Jira server" includes additional details on what files need to be edited to set the value.
