Good morning,
Is there a way to change the administrator of organization? Our current organization admin has left the company, and we would therefore like to reassign this right to a different employee.
Is it something Atlassian support can help us with?

Since the org admin has left the organization the best way here is to recover their id or you can reach out to support here : https://support.atlassian.com/contact/
If you reaching out to support please make sure to include below things
- site admin of your instance
- The email of the org admin who has left the org
- the new org email who you want to make them as the org
Note : If the org admins are of same domain then support will be able to validate these details quicker

@Oleksii Melnyk is absolutely right — if the organization administrator has left the company and you no longer have access to their account, only Atlassian Support can assist with regaining access.
In the meantime, I’ve reached out to the Atlassian team for help with this issue. They’ll get back to you within a few business days.
