I'm not sure if this is possible with next-gen projects and also wasn't clear how to configure this in Classic projects.

Essentially from our one single next-gen project, we'd like to allow multiple external users form different orgs access and view issues within that project but only the issues related to their organization.

We are doing custom development of tasks for multiple organizations within the same sprint but only want the tickets to be viewable by our internal team and then the external ones that are relevant to their organization.

Is there any way to achieve this with next-gen projects?

For classic projects, I was trying to configure issue-level security to achieve the same but realized there was no setting for issue security schemes in next-gen projects:

You are correct @Edward Cable ,the ability to limit visibility and configure security scheme in a next gen project is not yet implemented. See JSWCLOUD-18843
