We'd like to use different issue types than subtasks the same way as subtasks, that means having a child-parent-relationship, listing them as well as subtasks in the parent issue etc.
Is this possible?

you can do that. When you create a new issue type you can choose Type as "Standard Issue Type" or "Sub-Task Issue Type". Use the "Sub-Task Issue Type"
