is there a way to not have the 'cancel' button when writing a comment on a ticket? the reason behind this question is quite stupid, but it happened multiple times that I was working on the account update of a client and then, instead of clicking 'Save', I clicked 'Cancel' deleting the last 30m of my work.
No there is no way I'm aware of. You could be interested by the suggestion on Atlassian backlog.
