We are using Jira as well as Jira Service Management. Thanks to the GitKraken integration, we can create branches and pull requests from all our projects.
To keep an overview of our work, we use a Kanban board that includes all relevant projects (both software and service projects) through a filter.
Now I see that there are "Development" and "Code" panels available. I would like to use these to get a cross-project overview directly on the Kanban board. So far, I’ve only been able to set this up for individual projects. Do you know if and how this is possible?

Not sure if you can get a cross-project view by using those panels. They are project-specific.
for a cross-project overview, I recommend creating a dashboard in Jira with the necessary gadgets. Jira offers some basic gadgets, but you can get all you need by searching for apps on Atlassian Marketplace.
In case you want to try some apps, our Great Gadgets app offers all you need for tracking your Kanban projects thought Jira dashboards, while our DevOps Gadgets app offers some really helpful gadgets for visualizing the development (code) activity such as pipelines, latest build, commits, pull requests. So you can get them all in the same dashboard.

The options are based on enabled features on each project.
These options can't be used in a kanban board.
To get a high over related to multiple projects, the Atlassian product Compass is your way to go.
