Difference between "Project Categories" and "Custom Select" List field

I can achive quite similar functionality as "Project Categories" if I put Select Field with one default entry for each Issue Type.

So I am interested practically what is the best usage of Project Categories besides reports. Is there a feaute that it is used internally?

Nope, the project categories don't do much beyond group projects with a label. That's about it.
