I am having one of my Jira running on Server which will be upgraded soon but before that we need to migrate some of the projects to other JIRA. And my Jira server is about to expire, will Jira server accept Jira datacenter trial license for 30 days?

Jira Server licences are perpetual, so your instance and plugins will keep working even if their license expires. The only thing that changes is that you will not be eligible for any support.
So if your only goal is to have the old data still accessible for migration that will work. But if the Server instance will need to be upgraded to Data Center later it is better to upgrade to Data Center licenses now.

My ultimate goal is to accesss my JIRA data after its license expires.
So if my JIRA becomes DC, then also I can use it for a month ?

@Megha Agrawal your Jira goes into READ-ONLY mode once the DC license expires. If you just want to access the data you can go with an expired version otherwise you need to apply for a trial/commercial license.
