If I connect Jira projects to my Plan, does laying things out in the roadmap view affect the original Project or is it just affecting the Plan view that I'm curating?

It depends what you mean by "laying things out in the roadmap".
If you mean adding or updating start and due dates for the work items in your plan, you are actually updating data on those work items.
Plans work as a sort of sandbox, however. So the changes you make are only committed to the items in your Jira project when you push the updates through. There is a big blue button near the top right corner where you can see all changes that have been done inside your plan, but are not saved into Jira yet. You can choose to push them through or discard them as you see fit.

When we create a plan the source of the plan is either a project, board or filter and they are noting but iissues on the project
So in your plans, if you update the fields, change the status or comment on issues, it will affect the original project
But if you delete a plan, that would not delete the issues in the main project.
if the issue source is a filter that you have used having only few kind of issues, then changes would affect those issues and not rest of the projct issues
