Field configuration apply to specific project

I have created a custom field configuration but unsure how to apply in to a certain project. 

the default field configuration is applied to all of our 5 projects

Hello,

You should create a custom field configuration scheme, which consists of your custom field configurations.

The you should go to the Project Settings -> Fields -> Actions -> Choose a different scheme

@Kieron SangaMake a copy  of default field configuration,  associate field configuration  with  new scheme,   then in project setting  you  can  associate this  scheme to  the project!.
