I have set the Fix Version field in all my tickets. This is available across all statuses but the DONE status. Once its moved to Done the field is gone. How can I make this field available in the Done status ?

Assuming the " Fix Version" field is having a value in it and it is present in Issue type View screen, I think there should be some 3rd party plugin properties setup which is blocking the display.
Please open your Workflow, click on "Done" status and see if there is any properties setup. May be some scripts etc.

I have came across this before somewhere.
I think it was something not correct in the database.
You will need to raise this at Atlassian Support, to get this figured out.
Or, you could check you Kanban boards and remove the sub-filter
fixVersion in unreleasedVersions() OR fixVersion is EMPTY
