I'm talking about the field "Updated" in sub-task and in story;

The 'Updated' field is a system field that is automatically set to the current time whenever an issue is updated. The only way to make this happen would be to have an Automation rule that updates the sub-task.

However, this feels like a really bad idea, since it will look like your sub-task was updated, but it really wasn't.

What problem are you solving by forcing a change in the Updated field?
