I oversee a number of projects. People can work on more than one project at a team and fill different roles. I would like to be able to get a quick overview of this without having to click through either the various projects (~20) or the people (~20). There is the project overview/list but it only displays the project lead. Adding a column that displays (the first few) team members in that view, would address my need. Are there any other simple ways I could do this? It could also be a user-centric view (as opposed to project-centric).
To be clear, you want a list of every user and what role they have in every project or every project and what role every user has in that project, correct? There is no out of the box way to do that.
Yes, correct. What would be the simplest way forward? Custom-build a gadget to pull and display that info?

you can go to user profile and see the view project role you can see all the project role which a single user has

There is no built-in solution for that. You should check one by one for each user.
We developed Project Role Tab for Jira Cloud app for this exact need. It introduces an additional tab to the project dashboard named "Project Roles". It displays project roles and assigned users/groups to project roles within this project as below.
