How can I change my workflows?

The current projects show a simple workflow, start, in progress and Done.  I want t have all of my projects show the classic workflow and I don't know how to apply that to all of my projects,  I want to show the resolution options as well,

Copy the workflow, edit it, and associate it with the desired projects
