I am an org admin - I own it...but I cannot delete a task in Jira. why not? I hav elooked at all permissions, groups...I can delete jira from my company but I cannot delete a tiny insignificant task from a project. All i get is 'email admin'...I am admin..I cannot delete. Why oh why is it sooooo complicated?

First, you should rarely delete work items because once you do, they are gone forever. And the recommendation is that only Jira Admins (or Org Admins) can delete Work Items.
Having said that, Org Admin or Jira Admin do not have super powers to do whatever they want. They still have function according to the Permission Scheme associated with the project. So for that project, make sure the Permission Scheme is limited to who can delete Work Items, for instance like only the org-admins group or the jira-admins group.
Once that is done and saved, then you should be able to delete.

Please check the project permission and verify which role is assigned the permissions for deleting an issue. Then add yourself to that project role and try to delete it. If there is no project role assigned to the permissions then add a project admin role by editing the permission scheme.
