I'm trying to share our startup accomplishment from 2016 in the same roadmap format we are using for future development, but Jira Roadmap feature didn't allow me to do that. Is there any configuration I need to change in order for Jira to allow me to make that roadmap?

You can also use a Trial version of Release Management & Roadmaps for Jira Cloud to create a roadmap view of old versions disregard the fact whether it was archived or not. Export to PDF will be available shortly. This will work if you guys used fixVersion properly in the past. For details you can also generate Release notes to attach "meat on the bones" to your roadmap view.

There is no limit to plan Events (or display Jira issues with dates) in the past or in the future. You will then be able to publish your Roadmap on Jira Dashboards or Confluence pages using Gadgets.

Per your description, I believe you are talking about the Roadmaps feature provided in Next-gen projects of Jira Cloud application. Is that correct?
Unfortunately, the timeline data range limit of Roadmaps is -1y past and +2y future from today, so you are not able to configure it to take all the activities coming from 2016.
The reason on why this feature is configured this way is that a data range limit higher than the allowed can cause performance issues on Roadmap. We have a feature request to implement the customization of the timeline in a way that would not cause any issues:
