How can I find the total time spent on a project in Jira?

If you're open to solutions from the Atlassian Marketplace, you may want to have a look at the app that my team and I are working on: JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets.It also comes with a number of advanced features, including issue grouping by any issue field(s), and sum-ups.
With these, you can build a view like e.g. this in just a couple of clicks:
This is really just one of a virtually endless number of possible views and reports; you can also view and group by any other issue fields, configure different sum-up styles, etc. etc.
Issue grouping and sum-ups also play well with JXL's other advanced features, such as (configurable) issue hierarchies, conditional formatting, or inline bulk editing via copy/paste.

If you'd like to use a dashboard gadget, you can use Jira's built-in "Worklog Pie Chart" gadget. By selecting a filter that includes the relevant issues and choosing the project static type, you can see the total worklog entries made for each project.
However, if you require a more detailed report, I would recommend using a time tracking application available on the Atlassian Marketplace. One of these options is WorklogPro. With WorklogPro, you can create a timesheet view to display total worklogs for specific projects within a defined period, along with the dates the worklogs were recorded. Additionally, thanks to WorklogPro’s hierarchical grouping feature, you can select specific projects and group by fields such as issue, user, issue type, etc., to view the total worklogs for each field.

If you are looking for a more advanced tool for reporting time logs in Jira then I strongly recommend Worklogs - Time Tracking and Time Reports, created by the company it represents.
The application has a clear and easy-to-navigate UI. You can easily check how much time is currently logged in each of your projects.
Not only will you display the time logged in a particular project, but you can also view how much time a particular user has logged in, what task and more.

The default board time tracking reports allow you to get this information. However, if you want more summarized information with additional gadgets to monitor your sprint or project and are open to using a marketplace app, I recommend you try Mindpro Insights. You can easily create dashboards with pre-loaded (including time tracking) and custom gadgets and filter the entire dashboard by project. Gadgets are configurable, and you can share the dashboards with project users or the organization.

To find the total time spent on a project in Jira, I recommend using a third-party app since Jira’s native reporting tools have limited capabilities for comprehensive time tracking. My suggestion is Timepiece - Time in Status for Jira, the oldest and leading time in status app on the Atlassian Marketplace, developed by my team at OBSS. It’s available for both Jira Cloud and Data Center.
I understand that you're not specifically asking about worklogs but rather how much time issues have spent in different statuses throughout the project lifecycle. Jira’s native tools don’t directly provide this insight, but Timepiece - Time in Status for Jira is designed to solve exactly this need.

Determining how much time your issues are spending in a project is related to what your company vision is as time spend in a project and the way your workflows are defined.
For example, do you want to track the time that the issue spent in active statuses, such as In Progress? Or do you want to add the time spent in the To Do step as well?
If you are open to using apps, you can use Time in Status Dashboard for Jira one of the apps released by our company.
Selecting your project you can easily see how much time each issue spent in each of the workflow steps and also how many times the issue was transitioned into each step.
You can express your time in multiple formats by selecting one. You can export your data to CSV for further analysis and charting.
If you want to be more specific of which issues you are searching for, you can use the filter fields to obtain only a subset of your data.
You can visualize your data in two perspectives.
