How can I search for Projects created by a specific user?

I see that you can search for issues created by a particular user but not projects. I'm using JIRA Software Cloud.

Howdy @Garrett Glick: QA LEAD , 

It sounds like you are attempting to see which of your users are creating specific projects within your JIRA Software Cloud instance.

Issue search may not be the best solution to your use case, as you stated within issue search you can see user information about issues and who created them but the same does not exist for projects. 

Depending on the use case, if you are attempting to see who the current project lead is you can find that on the projects page by navigating to JIRA Software -> Projects

However, if you are attempting to find the user who created a project from an audit perspective since maybe they created a duplicate project, you would want to use the JIRA access log which can be found by navigating to JIRA Settings Cog -> Audit Log and under the Change summary of "Project created" you will be able to identify the user who created the project. (This assumes your instance of JIRA Cloud isn't currently on the Free plan which does not include Audit Log access.)

You can try it like it says Steven, or if you have a script runner installed, there is a "View Server Logs" built-in script that will allow you to view the last n lines of certain log files. You can try that
