How can I update the dashboard to see what another user might see (think coverage for out of office)

Hi Breanna,

The other user could share their dashboard with you, as explained here:

https://confluence.atlassian.com/display/JIRA/Managing+Shared+Dashboards

Or you could create your own dashboard that reflects their dashboard and use that to follow up on their tasks.
