The members of my team have different working Hours per day according to their contract. How can the number of working hours per day be set individually for each team member?

I agree with Carlos you can't do that without any external help.

Unfortunately you can't do that, Jira's time tracking feature is basic and wont allow you to customize it the way you intend to.

There are some plugins that can help you with that (ie: Tempo plugin):
