How can we limit a user to a specific project?
Since projects are opened with the default "Open" access, they will be available to all users. We need to limit certain users to specific projects, and are looking for the optimal way of doing so.
Using "Private" access to all other projects is a possibility, but risk is that this setting will be forgotten when creating additional projects in the future. Plus, it has the maintenance overhead of granting access to new privileged users to the existing Private projects.
We are working in Atlassian Cloud environment.

This can be done by limiting the Browse Projects setting in the Permission Scheme attached to each project. Simply grant access to that setting by group.
You can also get more granular by implementing issue security if desired. We tend to rely on that one more than at the project level.

I'll try to better describe our challenge:
We have many projects in our company. We will now start to work with a contractor, who we want to allow access only to the specific project he was hired for.
Is it possible without changing setting of every existing (and future) projects?

I think you are still going to have to do that via a combination of permission schemes and groups. We use a group called External Access. The beauty of the scheme is that you can change it one time and have it apply to all projects. You can also factor in roles on projects (the People part of Project Settings).
