×We would like to be able to have dynamic issues that change depending on the issue type that is chosen. Is this possible?
For example; if we have 2 main request types, News and Press, the News issue will have different fields to the Press fields. They will have shared fields, like Summary, Priority, Description etc but then also some individual fields that are issue type dependant.

Yes, it is possible, for this you need to create two diff screens one for News and another for Press. then add the fields that you want on both the screens.
Create the screen scheme and add both screens to this screens scheme and then associate the screen scheme to the Issue type screen scheme then map this to project.

This is absolutely fine to set up within JIRA Software. You will need a Field Configuration Scheme set up with a Field Configuration for each issue type. Both issue types can share fields, the field configuration tells the issue type whether to show, or hide, or even require the field to be filled in.
You will of course need a Screen Scheme however the link above how this covered as well.
For the new fields, you will need to set up and specify custom fields and their field behaviour type.
