We're managing multiple organizations under one umbrella company, each organization has multiple projects and a dedicated project manager and team working in it. We need to handle the projects separately in the organizations.
Eg:
You can have separate instances for different organisations if they are customer facing.
If it is only for their internal use, you can do with one instance and multiple separate projects for the each organisations respectively.
To identify organisations you can use "category" and manage projects with user groups dedicated to each organisation. i.e. user_org1 , dev_org2 etc
You can also define security levels within each projects.
If you are using cloud you can check the roadmaps to view organisations at one place with status defined as well.

you can do this by giving only users for organization 1 permissions for their projects and users for organization 2 only permissions for the projects of that organization. Then the users will not see the projects of the other company, they do not belong to.
