What type of project are you using? Get that information from the Type column on the View All Projects page under the Projects menu.
In a Team Managed Software project the labels should display automatically.
In a Company Managed Software project you must go to the Board Settings > Layout > Card Layout, and add the Labels field to the card layout.
Hi the issue was that if none of your tasks have a label then it does not show up as an option which is super confusing. Also if you add a field it seems like you can not have a custom field show up in the card layout. Maybe that's because I have a team Managed Software project? Doesn't seem great to have no way to do adjust the Card Layouts

Team Managed projects don't currently support adding extra fields to the card display. There is a change request for that here:

You said "if none of your tasks have a label then it does not show up as an option". Where are you expecting to see this option?
As I said values in the Labels field will automatically display on the cards in Team Managed Software projects.
Do you perhaps mean that you expected to see it as an option for filtering the issues, shown above the board columns like this?
If so, then you are correct. The predefined pull-down filters like Labels, Epics, and Types will only display if there are cards displayed that contain information for those fields.

Note: Labels can become too much for a card. Especially, if there's many labels for a task.
