We have 2 Jira Cloud accounts here at work and one of them updated to the latest UI but the other didn't. Is there a way I can manually update the UI to get the latest?

If you or someone else in your organization has not specifically asked for the new UI to temporarily removed from the instance, you can click on your profile picture at the bottom left hand corner and choose to use the new UI. "New JIRA Experience".
