How do I make JIRA email notifications include only the changed fields?

When we get an email notification that something has changed, we are looking for a way to only get the fields that changed and what the difference of the old vs new value is in the email. Does anyone know how to do this?

Ex: (something like this)

                      Original                          New value

Assignee         Bob                                Jim

Due Date    23/10/2015                       12/10/2015

You have to tweak the code/soy templates (depending on how much customization you like) to accomplish this. Are you ok with this route?
