In our JIRA workflow we have a status named "Ready for Code Review". Moving a ticket into "Ready for Code Review" maps it to a COMPLETE status (as per the 1st screen shot below).
In the Active Sprint view, clicking and dragging a ticket to update it reveals that "Ready for Code Review" is aligned with the "Done" column, along with several other statuses. See the "Ready for Code Review" at the top of Done column in the 2nd screen shot below.
In Board Settings, "Ready for Code Review" does not appear anywhere, including in Unmapped Statuses. I would like to move "Ready for Code Review" to another column, but not sure how to do that if it's not visible in Board Settings. Any ideas for how I can rectify?

I have to say I find this rather odd. I have never seen this before, not that I have seen everything. What is odd is that clearly the status is mapped because of your second screen shot. I know this is crazy but i'm wondering if the status is somehow hidden because of the number of statuses (a lot) in the Done column. Just wondering if you temporarily un-map some of the statuses shown and see what happens? Crazy I know. Another thing I'm currious about is the numbers. if you look at the qty in the column (total) and then look at the config screen and do the math - sum of the parts. does the delta equate to the missing status?
My final suggestion - build a completely new board and see what happens.
I wish I could build a new board, unfortunately I am using a client's JIRA and don't have the go-ahead to do that.
I did try unmapping some statuses just to see if the Code Review status was hidden or 'below the line' but no luck.

Sorry it's super small. I now notice that the "Code Review" status is not even reflected in the workflow diagram, so I guess that is the problem. I would need to get someone to update the workflow?

Yep that is the reason for sure and validates my suspicion. You need to check to ensure the first image actually relates to the latter. Then edit the workflow and add in the desired status.

Sometimes the unmapped statuses aren't always pulled in (in theory it should be there). I've found that if you edit the main board filter query and add in a project or the related workflow at the beginning of the JQL, go back to reconfigure the column and then restore the original filter query, you may have some luck.

Thank you for the suggestion. I tried it.. updated the filter and saved it then went back to Board Settings, but the status still wasn't visible. I actually tried it twice, editing the filter in a different way each time, no luck.
