I cannot find a link or page that provides a way to switch from the demo to a paid account.

Once your evaluation is up, OnDemand will renew at the monthly rate and your credit card on file with your account will be charged - the only difference between the evaluation and the paid instance is the payment.

How do I change the credit card number before then?

The card on files no longer active.
