How do I pull up stories from previous sprints?

You can search for items in a previous sprint in a couple of ways.  First, you can simply use the Sprint field to search for either the Sprint Name or the Sprint ID as shown in the documentation – Advanced Searching Fields Reference - Sprint

You can also search for issues from all previous sprints by using the closedSprints() JQL function as mentioned here – Advanced Searching - functions reference closedSprints()
