I want to set a default value for my Text fiel (Multi-line) which should be a short sentence. How can I do it?

Just head to the configuration of the custom field (System -> Issues -> Custom fields):
Then click on Edit default value:

@[deleted] beware about setting default values. I've found about half the users will never update or even look at a field that already has a value in it.

You can do this in 2 ways.
1 - when you created the field, you can set the default value
Go to the field you want a default for
Select Contexts and Default value
On the next screen you can set a default value where ever that field is used.
2 - When you create your form, you can also set the default value for that form alone
Go to the Request Type or Form
Add the field to the form
Then you can set the default and it will be hidden on the form.

Jira settings > Issues. In the Fields section, click Custom Fields. Find the custom field you want to configure and click include > Configure. And "edit default value" button.
