We use multiple version number fields for our bugs - found in, fixed in, verified in. Is there a way for me to update one list and have the new value added to the others automatically? Or is there a sync function I could run to do this?

instead of using dropdown selection fields (in Jira it is called select list fields), you could use version picker fields. These automatically offer to select one of the versions in the project.
So, if you create new "version picker" fields, you only need to copy your existing values over to them. You can use these community answers for solving that:

I have a dropdown selection field for Affects Version. it contains our version number:
7.21
7.22
7.23
I have other version fields such as Fixed Version, Version verified in. When we start version 7.24, I have to add it to all 3 version fields.
I would like to add it to the Affects version field as a new option in the dropdown field, and have it automatically added to the Fixed Version and Version Verified in fields as well, since they all need to have the same list.
