Hi, we are wanting to determine on average how long issues of a certain issue type take to go from To Do to Done (ie not including time the card has spent in backlog).

Seems you are after Cycle time metrics. With Jira out of the box, you could do this with the Control Chart. All you need is a kanban board that holds your data and an optional quick filter to select the certain issue type you are after.
The control chart is not available in next gen projects. So if you need another way of doing this, you could consider a reporting app like EazyBI. You can find some interesting pointers in this related question.

You can solve this task using our Time in status for Jira Cloud by SaaSjet (link to the free trial version of it).
With this tool you can easily track average time issues spent in statuses. Also, you can get a time that a particular assignee was assigned to each issue, date and time when every issue entered each of the statuses for the first time, how many times an issue has been in each status and other.
All the reports you can view as charts.
Also, you can try Time Between Statuses. Using this app you can monitor the execution time between statuses in the workflow.
Moreover, you can export all necessary data as a report in XLS or CVS file and analyze it using Google Spreadsheets, Microsoft Excel (get the average value of data etc.)
