How does Jira determine what is included in a release?

I created a Release in Jira today and when I went back to look at the kanban board, I discovered several items that were listed as completed were still present on the board. Granted some are tied to Jira issues that are not complete yet and I didn't expect them to be included in the release. However, there were some items that were completed and had no dependencies that should have gone into the release. What did I do wrong?

There are two ways you can add issues to a release. Use the "Edit" option on tickets and pick the release (version) under "Fix Version" field.
