I need to export a list of the subtasks and their statuses in one issue. I would like to do it daily so that key users can see progress. Is there a way to to automate this and send it directly to those key people? And is it possible to include the overall progress bar in the email?

There are a few ways to get your ticket info emailed to users, although I'm not aware of a way to include a progress bar.
The first way is with a filter subscription. You can create a saved filter that's shared with the users who need to receive emails that contains your issue and its subtasks, then create a subscription and add the users to it. They will get an email with a list of all the tickets on a schedule you specify.
Your filter JQL would look something like this:
project = "EC" and (issuekey = EC-2 OR parent = EC-2) ORDER BY created DESC
You could also use the same filter with a scheduled automation rule.

Are the people to whom you want to send the information already licensed users of the Jira product with permission to view the issue?
If so, then you could set up a Saved Filter, share the filter with those users, and have the users subscribe to the filter to receive the list by email on a scheduled time period. If the users all belong to a User Group, and you have the Global Permission for Manage Group Filter Subscriptions, then you can set up a subscription to be sent to all members of the group.

If the users are not licenses users of Jira with permission to view the issues, then you could use an Automation Rule to retrieve the issues at a repeating scheduled time and send the desired users an email of the data. Automation Rules can be created only by Administrators of Projects.
There is no option for showing a progress bar in the email with native functionality. I have not researched if there is a third party app that could add that.

I think subscribing to a filter is the best out-of-the-box alternative.
