I am new using Jira and I have been trying to modify a particular board (see attached) with no success. I have admin rights but I did not find where I can edit it or even if editable or not?. None of the option highlighted in green let me add or delete columns. I am not looking to create filters, I just want to customize that screen.

You are not going to be able to do those things there. If you need more, you need to create a filter.
Is there any reason for it? I mean, is it a Jira default non-editable table?

if you're open to solutions from the Atlassian Marketplace, you could try out JXL for Jira. It's a fully-fledged table/spreadsheet view for your issues that integrates with your project very similarly to the issue list, but can be fully customised to match your needs. This, of course, includes the ability to add or remove columns.

You can add any of your Jira fields, build-in as well as custom fields.
