At AssoConnect, we are trying to implement our Product & Development workflow in Jira.
We have three types of pieces: Epics, that break down in Tracks (releasable increments) that break down in Tasks.
Using the default "Epics" ticket, one can use the UI to create children tickets:
Is it possible to configure another type of ticket to have this behaviour?
I would like my teams to easily:
- create Tracks inside an Epic
- create Tasks inside a Track
to map our way of breaking down big issues in smaller, actionnable tasks.

The hierarchy provided by Jira Software is essentially:
Epic -> [Story or Task or Bug] -> Subtask
You could potentially use this to model your organisation's system of Epic -> Track -> Task. However, Subtasks have some limitations and they might not be suitable to track your Tasks. You may want to look at how they can be configured and fit in the hierarchy before you try to use them for this:
You cannot add an issue type like your Tracks between Epics and Issues. To add layers to the hierarchy, you really do need an app or a Jira Cloud Premium feature like Advanced Roadmaps.

No, Jira Software only has a single Epic issue type. You could create another issue type for Track, but it's going to be at the issue level only, same as stories, etc, it won't have the epic-link, colour, status etc functionality.
However, you say you have Cloud Premium, which includes Advanced Roadmaps - those can provide layers of initiatives that you might be able to use to do what you need.
