I have set up the IMAP server and a Mail Handler that takes an incoming email message and creates an issue from it. How might I configure this set up so that based on some criteria coming in with the email (address, name) Jira will be able to look at that information and KNOW which project it is supposed to create an issue in?

Ok, thank you. So, when I define a new email handler, it allows me to select only 1 POP / IMAP Mail server. Each POP / IMAP Mail server has only 1 email address associated with it. So if 5 different people seeking support email the same POP / IMAP server and therefore the same email address, it would seem that either the POP / IMAP server would need to be able to sort emails coming in based on some criteria (like the address of the email sender) or I would need to create a new POP / IMAP server for each person that wants support. I tried to differentiate between these two scenarios in the screenshot below.
Which of these scenarios is correct and is there a good guide for going about setting up that environment? Or is it easily explained here on the forum?
