I want to know what the average days aging was on 9/16/2017, 9/16/2018, 9/17/2019 etc
How do i find what the average days aging was on a give date?

With this app you generate time in each workflow status for multiple issues with multiple filter and grouping options. You can also extract trends analysis and add that as a dashboard gadget too.

If you consider installing third-party add-ons, option for you can be Time in Status. You can get various real time reports with add-on. To get average days aging was on a give date just

For your need I can recommend a marketplace app. Timepiece - Time in Status for Jira , the oldest and the most comprehensive "Time in Status" app in Atlassian Marketplace, which is built by my team at OBSS. It is available for both Jira Cloud, and Data Center.
Timepiece mainly allows you to see how much time each issue spent on each status or each assignee. You can combine the time for multiple statuses to get metrics like Issue Age, Cycle Time, Lead Time, Resolution Time etc.
To create your report
1) Select your JQL query for open issues in your project as the filter and create a Duration Between Statuses report.
2) Define Issue Age from the metrics
3) Select Average from the report options and group the issues by their creation year, month and day.
4) Your report is done!
The app calculates its reports using already existing Jira issue histories so when you install the app, you don't need to add anything to your issue workflows and you can get reports on your past issues as well.
Timepiece reports can be accessed through its own reporting page, dashboard gadgets, and issue view screen tabs.

By "average days aging", I assume you mean: for all unresolved issues on date X, what is the average number of total days since issue creation.
There is a built-in dashboard gadget called Average Age Chart which can provide a yearly grouping, but it does it for the first day of the year, not for a specific calendar day: https://support.atlassian.com/jira-cloud-administration/docs/use-dashboard-gadgets/
