We have many Issues in one Kanban Board so many question came up for me:
Can you filter IssueTypes permanently, so that any other user see this filtered Kanban Board as well even after when he logged out and back in ?
Can you display or create specific issues for one Kanban-Board within the project, so for example only Epics and Stories are seen on this Kanban- Board while on the other Kanban Board there only Sub-Tasks?
Can you use the same Issues on multiple Projects and if so are they affected if the one issue is marked done ? Can you use automations on the issue, which affects multiple projects?
Right - some basics:
Projects contain issues. One issue is only ever part of one project. Hence the unique ID with the project key.
Boards are views of issues. Boards can show issues of one or more projects or even a subset of those issues.
That is all controlled by the board filter.
So yes - you can have several boards show different Issue Types from one project. You need to change the board's filter to achieve that.
And no - the same issue cannot be in multiple projects. When you change the issue on one board, it will be changed on all boards, because it is the same issue everywhere. Exceptions are only board-specific values like Sprints and rank.
Can you filter ( i know there is a quickfilter but i dont like it since im not sure how long this filter lasts and every user might turn it off and on and im not sure wether or not the filter is projected on every user once I used it on the board) or set the board that way that only certain issue types are seen or allowed to be placed on the board?

Yes, you can (sort of) do most of this, assuming your Kanban board is a Jira Software board and not a team-managed project board or non-Software board.
On your three questions specifically:
I think you might want to consider having multiple boards, with different board filters on them. Assuming you have three projects (ABC, DEF and GHI), then create Kanban boards based on the filters:

yeah the multiple boards is a good idea, however as you mentioned on your first point that the filters are always turned off, once you log in again. So it is really annoying to put every time all filters for each board and to memorize the supposed filter. Isn't there a way that only certain issue types are allowed to be seen on the board at any circumstance, so I do not have to supervise my coworker each time which filter they have to put on, on which board so we are all on the same page?
