How to identify which all Jira add-ons and custom plugin individual project is using

We are planning to upgrade Jira version and accordingly do not want to continue unused custom plugin as well as JIRA plugin.
At project level we to have do analysis at project level, e.g project1 is using which all add-ons present in Jira

You will need to look at every add-on, work out the list of functions it provides and then go over the config of every project to see if they use it.  You will find there are some that you simply cannot tell.

There is no quick way to do this, as add-ons can add so many different functions and the way to "see if it is used by a project" is different for each function. 

For example, for workflow functions, read each workflow and look for the functions they call for post-functions, conditions and validators.  For fields, look at the field context, screens and field configurations.  For reports, well, you've got no way unless you start logging access.

Actually we are pretty sure about our custom plugin realated project.but for JIRA plugin like for example scriptrunner,so don't know how to check which project is using it.

ScriptRunner, in more recent versions, has the "script registry", a long list of all the scripts you've got in one place.  That can help with identifying where SR has been used, but still won't give you a direct answer, because it can't
