I need a way to highlight what exactly has been changed on a Jira ticket. I am aware you can check History of each ticket but it doesn't highlight the exact change. For example if there was a large piece of text in the ticket, and someone made a slight change to the middle of it, I want to be able to see the change only. not the before and after as shown now which means I have to read it all and try figure out what changed.

Are you trying to find a solution only for text fields (e.g. paragraphs) or for other fields as well?
I'm not sure you'll be able to do this natively. Maybe with Jira automation and some way of parsing new vs. old content and then storing that value somewhere (e.g. in a comment).
I think you'll have to reach out to Atlassian Marketplace and find some solution there. Something like Issue History for Jira would probably be what you're searching for.
Note that I didn't use that app, but I think some of my colleagues did for one or two implementations they had.

Adding to the suggestions from @Tomislav Tobijas and @Cristian0791 ...
Even with a marketplace app to track changes, some may not be easily visible. The reason is some addons (also from the marketplace) do not make entries in the issue history and instead record changes within their own data; some even have their own history entries. (e.g., some of the checklist addons have their own history log)
As a result, it is unlikely there is a single marketplace app which could track changes for all other possible marketplace apps. I recommend checking any addons you have, what information you want to track, and using that data to help evaluate tracking addons.

@dania jawad The app developed by my team tracks and highlights changes to any field. Here is a screenshot of how the description changes look, just to see if it looks like something you need.
You can also open each line for more details on what was added/removed.

The system don't suport this function out-of-the-box.
You may need to install additional plug-in for this feature.
