How to unlock a Field and configure it with the drop down options.

I need a field for iteration for my current project and would like to configure iteration 1 - 6 as the drop down values. Please advise if I can add a new field or can I configure it with the existing field.

just add a new field of type selection or multi-select whichever is appropriate. You can't change an existing field but if not needed after adding the new one then delete it or remove from the project if other projects are using.
