We have archived several projects, but occasionally I need to find work items in those projects. If I have the direct link for one of the items, I can access it, but I'd like to get a complete list of the items in an archived project so I can find the item I'm looking for. I am an administrator, but I can't find any menu items that let me access archived items. Where is it in the new interface?

Welcome to the Atlassian community.
If you have archived individual issues in a project but not the project itself you can access the archived issues from the Archived Work Items tab.
If you have archived an entire project you can access those work items only by direct links, as @Aaron Williams said. There is not interface for searching/listing the issues in Archived Projects. Unarchiving them is the option for doing that, but there may be some delay as the unarchived project's items are re-added to the search index.

You can view archived issues in live projects via the archive issues tab (in software projects that is)
You can only view archived issues in archived projects with the direct link to the issues themselves. As far as ok aware there isn't another way to do this.
The easiest option might be to reactivate the project in question to get the totals you need and then archive again.
