I'd like to Delete a few Statuses that my team doesn't use anymore.  How can I do that in a Workflow that is currently being used?

You will need to be a Jira Administrator in order to do this. I'd recommend removing the inbound transitions to those statuses as a first step, then when there are no more issues in a status, remove the outbound transition and the status.
