I have downloaded and installed the evaluation version for Windows, but this page is only about Jira Cloud. I feel lost.

The page should leastwise give a small hint on how to proceed for those users who have downloaded an evaluation copy.

On the right hand side of that page, there's a box which contains links to installing it on the three big operating systems.

After you've followed one of them, it becomes a bit more of a case of "what do you want to do with it?", although https://confluence.atlassian.com/jira/getting-started-187859414.html is not a bad starting point for a quick read.

After posting I noticed that the 101 course has become obsolete anyway.
