I think this will get you started.

XXX is your project.  There are several ways to look at this, and you can use filters and boards pretty effectively to get what you need.  If it's something you track routinely, I'd look at building dashboards.

  1. Tasks and sub-tasks without a due date;

    1a.  project = XXX AND type in (Task, Sub-task) and duedate is EMPTY
  2. Members without work assigned for upcoming 2 weeks and onward;

    2a.  Pretty challenging - Jira queries issues,not people   You might be able to query
  3. longest planned due date/longest task;

    3a.  project = XXXAND duedate is not EMPTY ORDER BY due DESC
    1. this will return all issues with furthest due date at the top
  4. Number of tasks on hand (to do, open);

    4a.  I would do this via a kanban board, but you can query  project = XXX and status in ("To Do", open)
  5. From 2019-12-01 to NOW;

    5a.  project = XXX AND createddate >= '2019-12-01' and duedate is EMPTY
