As I say, we cannot confirm who your Jira/Product Admins are - most of us on the Community are just normal users like yourself!
You can try to contact Atlassian Support and see if they can help locate your Admin - but contacting your internal IT Support Team or asking your colleagues who the Admin is is likely your quickest option.

Make sure you contact the admin within 60 days of the project being deleted. If it is greater than 60 days, the project gets automatically purged.

I am sure you have an internal IT ticketing system, open a Internal support ticket to identify the admin and get the project restored back!

It's a pitty that situations like that happen... human error is one of the most common reasons for data loss. Hope, you could find your Administrator and managed to resolve your case positively.
Hovewer, to avoid situations like that you can try to back up your Jira data. It can be backup script, Jira Backup Manager or a third-party backup app. Here you can learn more about the possible options: Jira Backup Tools.
